Howdy,Retired off premise Catered saying hello

I was in the food biz for a long time---owned a pretty good sized catering business for over 20 years---This looks like a good group  and I thought I might add something---maybe even a laugh or two---

 

Now I build things---I smile when I tell a homeowner ,"Mam, there will be a little delay,perhaps a week to ten days,"  all the while remembering the panic that ensued is a party served so much as five minutes late.

Over 20 years of experience?  Maybe you could stop by the Culinary Students forum as well and share you wisdom, I’d be willing to bet those kids would appreciate that.

Thank you for the greeting---I did peek into the student forum and got a chuckle out of the recent grad that wanted a 9 to 5 job within walking distance of home---

 

I remember one or two of those ----one shift wonders--"you can't  do that without a Bain Marie pan!"

 

Or the guy that grabbed my favorite 14" knife and started 'sharpening ' it by bashing it against the back of another one of my knives.----You can do a lot of things in this world ,but never mess with my personal knives.

 

We kept our selves busy, Full time staff of 7 or 8 and over 100 part time on call staff. 3800 sf facility.

Mostly corporate work--it made sense to spend time selling to someone who would repeat--and was spending someone elses money.

 

Biggest event 7200 people--all cooked on location--and we did another party on the same day.
