White and Black Truffles

I'm trying to learn more about black and white truffles. Right now I'm vacationing in the Istria region of Croatia where truffles are all over the place. I have used truffle oil for cooking before although only a few times and I have also tasted black truffles only a few times too. Since my palate is still relatively inexperienced for truffle taste I'm trying to find out about the quality of truffles I'm sampling at the different places they are selling them.

I have also searched the Internet for some tips and things and have learned a bit. So i still have a few questions that I'm curious on:

- How long do truffles last and does the flavour degrade over a very short period of time? I read a little on preserving them by heating them in some water and then sealing them in a jar for long term storage.

- Whats a reasonable price in North America or Western Europe for two black truffles just under a golf ball size. Here they are asking for roughly 13 Euro but prices are negotiable. White truffles are about 20 Euro and a little less in quantity.

- I read a little on the grain of white truffles and how that seems to matter for quality. Any more experience here?

I guess my biggest concern is quality of truffle that I'm purchasing and the price. Any help, tips or experience would be awesome.
