Strange coloured liquid when using beef mince

Hi,

I bought some beef mince today and cooked it up to but in a lasange. I've never bought this kind of mince before. It has some sort of strange (almost artificial looking) red/orange liquid forming at the top of the pot on the stove.

When I take the liquid out, it becomes solid and turns orange in a few minutes.

Is that the fat? I don't recall it happening with the normal mince I buy.

I can't think what else it could be- my ingredients were Chicken stock and water, onion, garlic, cinamon, herbs and spices.

Uhm, yes that's fat.  And the color comes from the cinnamon of course.  Maybe you bought ground beef with a higher fat content than usual.
