Welcome, Gayle! I'm a home cook too, and can assure you your knowledge of techniques and other culinary topics will grow exponentially after just a short time in this community. Not only is there a lot of information posted here in the cooking articles, cookbook and equipment reviews and the ongoing forum discussions, but the members themselves are a very, very rich resource indeed. The professionals and other home cooks are generous in sharing their knowledge and experience, so information is available to you here that isn't in other online communities. While we home cooks can't post in the professionals' forums, we're encouraged to read there and learn from their discussions. We do our posting in the general forums, where everyone (including the Pros) post. 

 

What particular methods most interest you? What would you say are your favorite dishes to cook now?

Right now I'm kind of focused on learning to cook whole grains in my rice cooker. I'm also a spice nut and interested in slow cooker recipes and vegetarian recipes. I'm not vegetarian but my daughter is.
