Sauteing with parchment in the pan?

I feel stupid asking this question but I'm watching masterchef professional, and I am seeing this chef cook fish with parchment inside the pan. I have never seen or heard of this before. I'm assuming it's so the fish doesn't stick to the pan or burn?, but I've never witnessed this technique before. Is anyone familiar with it?
