Lamb and Buffalo Sliders

Trying to make a couple different kinds of sliders tonight.

I'm curious how well these cheeses would pair with the meats and what else y'all would recommend putting on them? I wanna make 4-6 different kinds.

I went to the market and picked up ground lamb, buffalo meat, quail eggs, rosemary, garlic, mint, baby spinach, thyme, smoked gouda, boschetto with white truffles, queso al vino, and taleggio.

Sounds good.  The gouda should work well, the boschetto may be a bit too mild or sweet, but I'd eat it on a lamb slider!
