What is your favorite thing to grill in the summer?

Who doesn't love grilling?  I find it very funny so many people cannot "cook" but they can grill.  It is so personal and they all have their own way of manning the grill.

 

I love barbeque grilled chicken with grilled corn and sour cream mashed potatoes.  I can eat my weight in that stuff.  So, what is your thing?

BBQ shrimp (shrimp wrapped in bacon, skewered, grilled, glazed with BBQ sauce at the end).  Also like to blacken tuna and serve over a caesar salad.

I grill year round, however in the summer when the vegetables are just picked, it's hard to beat corn on the cob from a farmer's roadside stand.  There is a place as I drive into our town which has fresh corn picked daily.  And the farmers markets, when I see something that just says "Eat Me!"

When they are available I like grilling fresh mackerel and anchovies, small snapper, etc.  I also love to grill vegetables especially eggplant, summer squash, peppers and corn.  Of course meats (especially pork) are also a favorite.

Whether it's chicken, beef, pork or fish... always grill some thick slices of onion.  If it's a BIG onion, will cut 3-4 thick slabs... I stick in toothpicks (in 2 directions) BEFORE I slice, so rings stay together.  If the protein is in any kinda marinade, the slabs of onion go in, too.  I like to grill just short of BURNT!?!

Ribeye, corn in the husk, and scratch pork & kidney ("Cowboy") beans.

Yup. Corn in the husk for sure. Flank steak. 'nough said.

My buddy and his family are from El Salvador - He makes some amazing flank and "Breakfast Menudo". Limes and avocados with everything. Heavenly cuisine. I learned a lot that weekend!

One of my all time favorite meals is pretty simple - grilled chicken well seasoned and with a tangy Q sauce, accompanied by, I'll admit, boxed mac and cheese.  No doubt based on some long forgotten childhood food memory, still echoing around in the dark recesses of my consciousness.

 

Something I do remember from family reunions and such is soaking the ears of corn in tubs of salt water before putting on the grill.  The waterlogged husks steam the corn inside to start, and as they begin to dry, then char, impart a nice, smokey note to the sweet taste of the kernels.  Of course, it was really hard to find fresh sweet corn in rural areas of Indiana and Michigan back then licklips.gif
