Salad, Salad, Salad

What are your favorites, or own creations you like. I make salads and pasta salads all year round, as the fruits and vegetables are beautiful.  Always looking for a new twist. Just a few of my favorites are crab or tuna Nicoise, Watermelon & Feta, strawberry and spinach w/ feta or goat cheese, & on & on. Tempt me with your salads.

One of my favorite salads is Radicchio, Belgian Endive and Arugula with torn sauteed crouton and a simple vinaigrette.   Another is a Caesar. 

 

Once in a while I'll make a classic Wedge with steak, but my wife is not crazy about that one.

quinoa and black rice with finely diced chopped vegetables and whatever comes to mind (tomatoes, frozen peas, shrimp, asparagus, etc)

 

rughetta, fresh fig, fresh pecorino or else taleggio, with honey and oil salt and pepper dressing

 

caprese with avocado added and fresh pesto from the mortar and pestel

 

mixed romaine, carrots, celery, radishes, cucumbers, tomatoes and oil and vinegar, salt and pepper (bowl rubbed with garlic)

For me, a salad is a meal.  I've finally come to terms with the fact that I do not like side salads with meals.  I was raised to eat them and have tried to force myself to continue it and have always successfully put a salad on the table but now I'm over it.  I would much rather serve a side of steamed broccoli or grilled asparagus or sauteed spinach as a side and call it a day.

 

But for a main course, salad is awesome.  I like crisp lettuces like romaine.  My go to salad at the moment includes romaine, red kidney beans, avocado, proscuitto, cucumber, green peas, with a mustard vinegraitte.  

 

I can't wait until figs are available.

Freshly made croutons are such a treat on just about any sort of greens based salad.

I like the idea of the sautéed croutons. Thank you. I might try it in a Salmon Panzanella Salad with green beans & cherry tomatoes.

 

Avocado Caprese is my favorite too.

I always make fresh croutons, so easy.

Toss cubed sourdough in butter & olive oil over medium heat until brown and crispy, sprinkle with granulated garlic at the end.

Another good addition to a tossed salad is cold cooked pasta, try it.

I am a salad fiend.......I not only love them, i crave them. Although i try, i don't always eat correctly because of my workload, but I do eat a salad every day, no matter what the size. I pretty much love all salads, but the one that really sings to me because of the crunch factor is a chopped raw marinated vegetable salad with a spicy red wine vinaigrette. any fresh vegetables will do but my combo is carrots, celery,snap peas, broccoli, cauliflower, shredded cabbage, combo of radishes, cucumbers, red & yellow peppers & jicama.....bean sprouts on top. next up is summertime tomatoes with evoo, basil, salt & cracked pepper. local tomatoes are just coming available here...i eat at least one every day once they do....summertime beefsteak tomatoes are proof to me that there is a god. i love a really good Caesar with Parmesan crisps or herbed croutons. at the restaurant we serve a southwest caesar i created(variation on a theme)which I particularly like....romaine hearts, roasted sweet corn, black beans, toasted pepitas, yellow & white corn tortilla strips, shaved parm.....with a chipotle caesar dressing.
besides fresh fruit I like the additions of good sun dried berries and pears in mixed greens salads. I truly love all salads and can be equally and totally happy with just greens, evoo, salt and a pepper grinder.
