Just curious, and interested in the opinions of others… If you don't see the knife of your choice on the list, please feel free to add one. comments most welcome. This is an either price no object or very budget minded, please comment about use and why you chose the one you did…

I've been using an 8" Ikea VG10 Slitbar. Ugly, cheap, actually cuts well and holds the edge well.  I sure wish it came in a 10".

I picked the much hated (on the forums) Global as I was gifted many from dad and actualy sharpened them up nice. I have found that different knives with different steel require different techniques to bring out there best in each blade. Globals like a stropped more convexed edge as there steel is a little softer than most J knives...........

Guess I'll justify my vote.

After finding and paying 25¢ for my Sabatier at a garage sale in the mid 70's, this knife has become the extension of my right hand. I've grown to find the balance and blade thickness ideal for almost any application I've used it for. From veggies, to smashing garlic and performing extremely fine slices of fish and meats, it has served me well for an all around tool.
