compensation plan for deli cartering sales rep

We do gourmet sub trays in central jersey. We are looking to deliver into manhattan. The tolls and gas aren't cheap so I am trying to figure out if its worth it.

We wouldn't be able to go to the city for an order less thsn $500.

The compensation plan I was thinking of offering an experienced catering rep was $250/ week which would just be a draw against their commission. The commision would be 15percent of the order. Is that too much, too little?

I don't think its too little but just wondering how other people compensate gheir reps.

Also does 10k weekly sales sound realistic for a sales rep in the city?

Yup.

First disclaimer, I'm on the West Coast and I'm in a City of 55,000

For me, the information you provided is sketchy, to say the least.

For me, 15% of gross sales appears very high unless you have an extremely low overhead and food cost as well as inexpensive labor. 15% of a $500 order is $75.00 for what, an hour of work and travel expense?

As far as $10k/week, that's 20- $500 orders or what, four per day? And for that you are willing to pay $1,500/week commission?

Provide some more details and you might get more response.
