Pidgeon

Need help fast ish

Been given 6 crowns? ( Breasts left on bone) of pidgeon to cook for a friend. He has no cooking skills whatsoever and is looking something i can cook and make flavoursome and he can warm up and eat via the microwave

Never have I cooked pigeon before and was looking to do a red wine casserole type dish. But looking at recipes they are showing quick rare cook rather then long and slow

Any ideas or pointers?

This is for a plain eater. Nothing fancy. Just plain wholesome ingredients he can recognise and something he would only need to cook potatoes or rice with

Hi there. Definitely with the pigeon breast you want to do a nice sear in a hot pan and leave it on the pink side in the medium. If you casserole it I believe it will become quite tough. As for accompanying flavours, think woody ingredients like spinach, wild mushrooms etc. You could even serve it simply on some toasted brioche with a nice red wine sauce.

Reheated in a microwave ? It would bounce off the wall .

Thanks guys

As I say it was doing an old fella a favour. Us neighbours help him with a meal here and there and someone landed with 10 pigeons for him

So I took the breasts off the bone, seared them quickly and then wrapped in streaky bacon. Made a mirepoix and a gravy of stock, tomato purée and red wine. Have thrown it all together and leaving it for him to oven cook

Hoping that the streaky bacon will protect the breast enough

Never eaten pigeon before and I think I'm a convert. Looking forward to cooking the rabbits I've been promised for the weekend. Those I remember from childhood but once again never cooked

The joy of country living. Unfortunately I missed out on a wild salmon yesterday but have been promised the next one of any size
