It's a great idea - i do it all the time. The meringue stabilizes the cream to some extent and it doesn't tend to run. Also it freezes very well, so you can freeze the frosted cake and then take it out and eat it when it's defrosted. In fact, if you just make the italian meringue and whipped cream, put it in a bowl in the freezer, you have one of the nicest ice creams without the need of an ice cream maker, it never makes crystals, stays soft all the time even at zero degrees F.
