Need ideas for vegetables.

Okay here's the thing, i am currently in lost of ideas for veggies at work. I mess around with stirfries, ratatouilles, bechamels and classics poached veggies but now i am currently looking for some new ideas, anybody could share some?

Roasted, pickled, fermented, purees. The question is kind of vague, is there a specific vegetable(s) you are trying to manipulate?

At the most we got the following:

Carrots
Brocoli

Cauliflower

Zuccinis

peppers (red/green)

potatoes

onions

garlic

tomates

cuccumbers

 

 

thats about it, we got the possibilities to order all food we want but now we got this in store.

I'm sure alot of people would love to help give you ideas or inspiration , but you really need to give more information.
What style restaurant? Fine dining? More relaxed ? What's the cuisine? How many seats? What inspires you? Are you after mains? Sides? Entree? Or dishes specifically for vegetarians?

Okay you see currently i'm working at a retirement center. rich people around 55-70 are comming here to eat great food and have a great time.

I've got hired because the cook that worked week-end totally f*^*&%d up the place. Now i am here currently rebuilding the customers trust and they are quite greatly responsive. The cuisine style is french, our chef is a french guy. My inspirations goes around french and asian cuisine. we got 80 seats but since the last guy f*^*&%d up, when i got here we had like 15-20 clients per service, been a month now and we ramped up with 40-45 clients. i'm looking to fill up the restaurant. I'm looking for sides ideas, so yeah thats it. hit me up!
