So let me start by saying that I am in the industry as a line cook. I have been in the market for a new gyuto for a while and I need some help. I have been looking at the Kikuichi TKC 210mm but it just seems so damn hard to get. It has been out of stock on CKTG for a while now and I dont feel like waiting for any longer. I just need some other recommendations on gyuto's. It doesnt have to be kikuichi, but I would like it to be 210 mm. Thanks for your help and input!
