Hi there all. Just getting your opinion this. Obviously you know when food is off, but from a health and safety point of view I'm not sure how many days I should give these preps. Please let me know what you think.
Thai black sticky rice. Cooked and finished with palm sugar. Cooled down, stored in fridge. How many days would you give that?
Cooked Coconut cream. Cooked down with some cardamom pods, fresh vanilla and palm sugar. Cooled down and stored in fridge. How many days?
Stewed fruit. Rhubarb and apple? Cooled down, stored in fridge. How many days would you give that?
Cooked tempeh with achiote paste, garlic spices etc. Cooled down, stored in fridge. How many days would you give that?
Cooked black beans, drained from cooking liquid. Cooled down, stored in fridge. How many days would you give that?
Cooked mushrooms with thyme and garlic. Cooled down, stored in fridge. How many days would you give that?
Taquito mix. Mixed beans, brown rice, mashed sweet potato, herbs, spices, tomato paste, peanut paste etc. rolled in a corn tortilla.
Bechamel sauce...
Napoli sauce...

Obviously I want to keep everything as fresh as possible but I have so many preps and cook in very large quantities so need to produce as much as possible but keep it fresh. Thanks guys and gals. Greetings from Australia.
