Jowl Bacon, Who's using it?

I buy for home use, keep a couple of pieces in the freezer to use for beans and seasoning other stews, braises, etc. The price is right at $1.99lb at the market.

Been thinking about using it on the food truck, slicing as a replacement for bacon on my  burgers as the price of bacon is going North of $4lb

You mean  guanciale ?  I'd love to try some.  I'm currently out of bacon, and the slab curing in the garage fridge is still days away.  Life can be rough.

Same cut, but smoked like bacon. No fancy name, two bucks a pound, not $25

I've bought some guanciale once to make pasta carbonara. It was really good. I don't remember the price but I found it at whole foods so it was most likely closer to $25/lbs than $2/lbs. frown.gif
