I want to start making our hamburger and slider buns in house. I have been experimenting with making potato buns with potato flour but they are turning out flat and dense. I'm looking for help on a good recipe or advice on making a nice tall fluffy bun. Thanks!

How much potato flour are you using in your recipe? If you're using 100% potato flour I would say that's the problem. Try using 90-95% all purpose flour and 5-10% potato flour, you can always increase or decrease this percentage as necessary. You could also try using potato flakes like for instant mashed potato.
