As simple as this obviously is, I am still learning about recipe ingredient amounts - so .. I would love traditional potato salad recipes indicating servings. I want to make one like my Mother made my whole life. I have all the ingredients but do not know how much of each ingredient to prepare for 40 people.
Moms version had apples in it along with all the other typical ingredients
Please post your recipe--------As to quantity? You will be safe figuring 1/3 pound of cold salads total--
If you will have two or three different salads---split the 1/3 pound total by the number of salads and be sure to balance the proportion by the popularity of the item---potato salad being the most popular--Pasta salad a close second--cole slaw the least popular---
Al of this depends on the size of the group----smaller parties are harder to figure---over 80 guests you will find the laws of averages works well-----
a bit embarrassing and hardly a recipe at all but here are my notes as my mom gave them to me for her potato salad:
Mom's Potato Salad
1. red potatoes
2. onions
3. eggs (1/2 doz or so)
4. peppers
5. carrots
6. apples (granny) (2 or so)
7. mazzola oil
8. sugar
Boil eggs; boil Potatoes; set aside to cool
Separate yokes from Whites.
Mix oil with yokes and set aside until end.
when potatoes cool,
add finely chopped onions, peppers, carrots, egg whites and mix with mayo.
Add Yokes slowly until desired color (not yellow)
Add apples
Add Sugar to taste (slowly) teaspoon by teaspoon
just add a little of that and then add a little more of the other thing but not too much! LOL - gotta love that kind of skill.
