looking for a fool proof way to make clotted cream.

Hey! I'm from Canada, a clotted cream-less country. I'm now in England and I've fallen in live with clotted cream. It's ridiculous. I was wondering if there's a way to make it not in the oven? What do you find works best?

I buy Rodda's when I want a Cornish 'fix'. biggrin.gif

They say they are working on serving other countries. I hope so, my family in Australia would LOVE it if I could send them some,

You could always send Rodda's an email with your question. http://www.roddas.co.uk/

I too would be really interested to get some knowledge on this. Its such a unique ingredient! I found this website which explains a non-oven method, but to be honest my instincts are telling me it would be even close to the real deal!

This one looks like its a bit more on the right track:

Some things you just can't take shortcuts with.

The wiki page says that scalding or steaming the cream is usually how it's done. I guess I'll just have to try it out a bunch of times smile.gif I'm okay with that
