Stacking was stupid.
Hmmmm...I think tea is still going strong. We'll see it mainstream with tea smoked (whatever)...., more herb infusions, still Asian noodles maybe more fusion with loads of veg., Artisan cheeses are more available.
Local foods are becoming an attraction here.....outdoor grills set up to cook just local foods.

I can only Speak for The Canadian Scene
Greater Toronto Area and Montreal
Fusion Cooking is very Hot as is Al Fresco with a Middle Eastern
Twist to it
Ethnic Cuisines are very common
Especially Carib-African
Tex Mex seems to have disseppeared as has Cajun and
Creole which had a lifespan of a gnat
I feel the next step will be a Fusion of Italian with South
asian
Hey
what do I know....
Ciao
