Help With A Homemade Mayonnaise Recipe

I need help with a homemade mayonnaise recipe for a Baja chicken slider I plan on making in the future. It originally is made with  Cole slaw but my husband doesn't eat Cole slaw so I decide to make the chicken with a good mayo and some bacon. Any suggestions on what type of mayo goes good with Baja Chicken?

What is Baja Chicken?

Mayo is technique.

 

1 egg yolk, equal amount dijon mustard, drizzle in oil, lemon juice to taste, salt, pepper,  dash of white vinegar to brighten the color.

Start with 1 egg yolk a teaspoon of your fav mustard add a pinch of salt & ground pepper, a teaspoon of white wine vinegar and whisk them all together

 

Drizzle very slowly a good veg oil into your yolk mix whisking furiously all the time. The mayo starts to form pretty quickly you can add more oil than you think...

 

Add a good pinch of dried oregano to your mayo and whisk a little more - I add a teaspoon of water to loosen your mayo - (make it more runny) 

 

The oregano will work well with the Zucchini & Chicken

OK. Try this:

1/4 cup fat-free sour cream
1/2 teaspoon lime zest
1/4 teaspoon lime juice
2 tablespoons minced fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper

Mix the bageebies out of all that w/ a fork. Smear it in your rolls. Include a slice of nice sharp cheese, a thin slice of tomato and some crispy lettuce. You can go w/ Hawaiian rolls or Slider rolls from Pep. Farms. Maybe toast the rolls first. Have fun.

I assume your Baja chicken is Southwest flavored in some way.

 

My scratch mayo is 1 whole, room temperature egg beaten in the food processor with a tablespoon of vinegar or fresh lemon juice, tsp of sugar, 1/2 tsp of salt, and a cup of oil. Beat all the ingredients without the oil first, then add the oil as the food processor is running. You'll get a great, thick mayo.

 

You could do a bunch of things to flavor it for a Southwest dish. You could add some roasted poblano chile, use lime juice instead of lemon juice or vinegar, and add some cumin. Blend in the chile after you've already whipped the mayo thick.

 

You could also just add chile powder, cumin and paprika for some Southwest flavor, or mix in a couple chipotles at the end.

 

You could reconstitute some ancho chiles and blend them into a paste with some minced garlic, extra salt and a sprinkle of cinnamon, then add it all after the mayo thickens.

I'd recommend adding some smoked paprika!   :)

I use 1 egg yolk, 6 ounces of salad oil, 1 tblsp. white wine vinegar, 1 tblsp colemans dried mustard....whisk everything together besides oil, then slowly stream in the oil. Once thick squeeze a lemon as well as a pinch of cayenne pepper
