I need some kind of mixer that will allow me to make large quantities of caramel sauce while boiling on the stove. I would like to make as much as possible at one time for a standard commercial/restaurant kitchen (min 2 gal batch). Temps get from 220-230F.
I've made smaller batches with a standard handheld mixer and it worked so much better than using a whisk and it was much faster. I would think that a standard mixer would work but it would need long mixer blades or beaters or whatever they are called.
Does anyone know where I can look for this or if it has a different name maybe? Thank you!
