Help - Japaneese Carving Knife for a gift (read: on a budget)

Hi guys, I need some advice.

 

I want to get a Japanese carving knife as a gift for someone.

 

He currently uses a range of Japanese knives including an I.O. Shen Gyuto 210mm as his main knife (but has had the same problems reported by some others with the blade chipping). He's mentioned a few times that he doesn't have a carving knife so I thought I'd have a look into options as a gift.

 

My budget is around £60 (under $100 US).

 

Any suggestions on where to start for that money?

 

 

My initial research suggests the JCK Original KAGAYAKI Basic Series KG-12 Slicer 210mm might be worth a look? Any thoughts/alternatives appreciated!

Thanks Benuser - had missed that option on my hunt around JCK! The FKM might do the job nicely.

 

I have had great service from JCK previously so leaning towards something in their range (but not tied to them if there are other suggestions).

 

I've just realised some additional info might help:

* He's got 3 young kids so stainless will probably fit best with his chaotic lifestyle

* He's right-handed so an asymmetric edge is fine.

* I'm not sure how he sharpens today, but he's the sort of guy you just know takes good care of his tools and will put in any effort required.

* He likes the shorter length of his 210 Gyuto for general work, but mentioned it's too short for carving so I'm looking for 240+

Great to hear. Have the 270 one, allows you to slice roasts in one or two draws.

New info; his knife holder is 250mm... Would you still recommend the FKM in a 240mm variant or something else?

 

Alternatively, whats the general conclusion from people, do you keep your slicer on your racks or in a box away to be brought out when you need it?

A sujihiki of 240mm is a very nice blade for a lot of tasks, but not for slicing a roast, IMO.
