Cooking for 200 people

I am cooking frozen chicken cordon bleu for 200 people.  My Home Owners Association has a beautiful professional kitchen with 2 large convection ovens.  I can put 5 full size sheet pans with 100 chicken cordon bleu on the 5 shelves in the oven.  My problem is how long to cook them.  It took 45 minutes to cook 2 chicken cordon bleu in my home convection oven.  Last month I cooked 100 chicken thighs (not frozen) and it took 1 hour and 10 minutes.  These chicken cordon bleu are frozen.  I'm thinking it will take 1 hour and 30 minutes at least.  I'm also wondering how long I can hold them in a warming oven.
Any advice?

Do a small test run of four chicken cordon bleu (two frozen, two thawed) in the home owners association convection ovens. Taste one of each, then extend the test to holding time on the remaining two. Taste the last two. Draw conclusions.
