meaty question

I was at my local grocery store(last time I go there). I was looking at stewing meat and noticed that the short ribs were green and furry. The butcher stated that this is mold from bone dust and threw them out.
The question is: is that true as i have never heard that before.

Yes it it true. Bone dust can carry a lot of bacteria also, not necessarily bad, but it makes it hard sometimes to make meat look good when there is a lot of bone dust.

I'd be very cautious about using a butcher or a store that doesn't clean out their product well in advance of visible mold growth.

 

Most butchers are very conscientious about removing bone dust... if for no other reason than to be putting a good looking product on display.

I was going to say... does it really matter where the mold comes from? I know to me it doesn't. I don't want to be hearing excuses as to why the meat in display is moldy!!

Definitely no excuse why its moldy, I agree, I should have stated that before, but was just letting you know that yes its true but then you should not have it in the case smile.gif
