Hi, I have a question. I recently started my internship for culinary school at the Hilton Hotel (Corporate location). I am wanting to become a sous chef eventually and now I am making $11/an hour.What must I do to become a sous chef at one of the outlet restaurants? Also I am still making mistakes such as burning the baguette, serving a sour sweet potato bisque, etc. I work in a fine dining restaurant in the hotel, and next month I will be working with a place called Trader Vics inside the hotel. Also would you say that the W hotel, and the Ritz Carlton would pay more than the hilton?

How fast you move up the chain of command is up to you and your ability to learn and your natural skills at management----
As a new hire, I suggest you keep your eyes open and learn how the kitchen runs----after two years in a high paced kitchen,you should have your cooking skills under control ---that's the time to see if you can help with inventory and scheduling----so much depends on you----
Stop doing those things would be a good start. Your focus seems to be on the money and advancement. You are putting the proverbial cart before the horse. Focus on the craft and the money and advancement will come, if warranted. All upper end hotels will pretty much pay the same.
