My name is Pablo and I live in Honduras. The reason I write this is because i want to hear experienced opinions regarding my life plans as a cook. I am 24 yrs old and dropped out of the career i was on to follow my dreams of cooking. I currently stage at one of the busiest local hotels (in Honduras we have few to none high end restaurants or any restaurants run by an actual chef) and plan to attend LCB in Ottawa, reason being that I think I have a greater chance of staying in Canada after graduating than in the US, see i really don't want to come back here there is no future for anyone seeking a culinary career here. I chose LCB because of it's reputation.
I am going to course the Culinary diploma and after that, plan to seek work at any restaurant or hotel to be able to get a workers permit and hopefully stay in Canada. I am very much aware that after I graduate the jobs expecting me will be minimum wage jobs and I don't mind working my ass off to get higher in the industry no matter how long it takes.
Do you guys think this is a good plan? Any advices or things i should consider?
Also before you suggest it, because of how my parents are, not going to a culinary school is not an option.
