After a recent visit from the EHO, he told me he can award us 5 stars, IF I use pasteurized egg in my mayonnaise, Ive been making mayonnaise, Tartar, Garlic Mayo, and Marie Rose for 32 years using fresh eggs (Lion stamped) but apparently that's not good, Ive tried Booker Cash and Carry for pasteurized egg and they don't sell it, though they can get it, its only got about 3 days life on it, can anyone help? I really don't want to buy mayo, as my customers love mine....

We us pasteurized egg yolk in our mayonnaise and desserts = or anything else that calls for raw egg yolks. Where are you based in the country I may be able to help.

Cheers
