Caramel sauce ... When is it done?

Hi

I got this caramel sauce recipe at work where I put butter, cream and brown sugar in a pot and start cooking... I never done this type of caramel sauce because my style of caramel sauce is cook the white sugar first to amber colour and add the butter and cream

How do I know when this caramel sauce is done and make sure the caramel sauce doesn't split?

It'll only split if the fat content gets too high.  If it does this, zing it in a blender with some skim milk or water, and it'll be fine
