So i saw this online recipe which says to make mesophilic culture using raw milk by just leaving it at room temperature for a certain amount of hours, I wonder if using pasteurized milk will work because raw milk is nearly if not impossible to be obtained. Have anyone have more information on this or has actually tried using their own mesophilic culture? I need this culture to make cream cheese, there was a supermarket nearby me selling cultured buttermilk and cultured buttermilk has some mesophilic culture in it which has to be left at room temperature to turn into a culture mesophilic but unfortunately that supermarket has changed ownership and doesn't sell it anymore or maybe it ran out of stock. So any information on input on whether pasteurized milk will work or not is highly appreciated, thanks in advance.
