I came across two cheesecake recipe, one has sour cream inside the filling and one doesn't. Since I am making my own homemade cream cheese, cream cheese is done using mesophilic culture, rennet(i skipped the rennet) and half milk and half cream and then ferment it. Sour cream is done by fermenting heavy cream. My mom prefer a more cheesy cheese cake and may skip the sour cream, so cream cheese do have 50% sour cream since sour cream comes from fermenting cream and cream cheese has 50% cream coming from the fermentation which later the mixture of the 50% milk and 50 % cream has to be drained of whey, so the structure is the same, so will adding the sour cream reduce the cheesy taste?
