French style ahi tuna app

Over the years of making menus, i have become stumped on a new tuna appetizer. It needs to be french inspired and winter themed, anyone have some ideas? I try not to repeat what i have done already. Seared or tartare is what i am looking for. Thanks

Ahi brushed with a martini glaze, seared, served with a couple of tapenades, a kalamata and a manzanillo

and potato gaufrette! haha Thanks Chef Layne but i have done the tepenade, not the martini glaze though, that sounds interesting enough

Do you have a recipe for the carrot chipotle sauce?

I should have it at home which is where I am headed now, but basically it is carrots juiced. The juice reduced to syrup consistency. Minced chipotles in adobo added in, steeped for a few minutes. Strained through etamine. Simple but intense.

Maple Horseradish crusted tuna, pickled beets, cuccumber wasabi sauce?

Ahi seasoned with garam masala, seared, with chiffonade of grilled kale and fried sweet potatoes with an acorn squash gastric

 

Ahi with romesco sauce and fried capers, charred leeks, and sieved hard boiled eggs

 

Ahi on almond tuiles with a relish of cardamom macerated Asian pear apples and candied lemon zest and a blueeberry lavender vinaigrette

 

Ahi with diced orange molasses marinated grilled red onions, toasted walnuts, and Granny Smith apples and a roasted beet vinaigrette
