I have been a chef for 25 years. I have worked in country clubs for about 15 years and am now a private chef and caterer in Fairfield ct. I joined chef talk to expand my culinary knowledge and to share some of what I have learned over the years if it is helpful to anyone. I am in the beginning stages of starting my own catering business and can use all the outside knowledge that I can get. So if anyone has any good tips, please let me know.
