need suggestions for what to take to event

Hi all.

I am going to an event in about a week; my first time.  I cook very simply, am vegan.  Each person is bringing enough for 8 people. Because I don't drive I need to make something that can keep for a couple days, something simple.  It is just an affair where there is finger foods, desserts, that kind of thing.  I had wanted to do something with cranberries, organic apples, raisins, some other fruit, but that may be too much of a logistics problem.  Would appreciate any suggestions.

A grains salad minus the fresh apples will keep well for a few days if kept refrigerated...add the apples just before serving or sub them with a variety of dried fruits...strawberries, sun dried pears, chopped dates, chopped fig pieces and pecans etc. dress it lightly beforehand with walnut oil and bring along more dressing to refresh it later....a simple raspberry or orange vinaigrette made with walnut or hazelnut oil might be nice or an apple cider vinaigrette to get that fall feeling in there. You could also mix and pack the dried fruits and nuts, the grains and the dressing( or it's ingredients separately), then mix it when you need to. if you pack the grains in a ziploc there is usually always refrigerator space for that. There are endless recipes for grain salads online........here are a few links that i like in particular with many great ideas. There are just so many wonderful grains and directions to choose from. personally however, i love trader joe's 'harvest grains blend' (couscous, orzo, baby garbanzos, red quinoa). I also equally love farro as well as wheatberries and wild rice rice and couscous and quinoa and barley and.....the list goes on....
I like anything from Mollie Katzen(moosewood cookbook) as well as from 'Laurel's Kitchen' (Laurel Robertson)....you should consider buying one of those books. Maybe check them out from the library first to compare.
Oh, plenty of dressing recipes on line as well...an orange cranberry vinaigrette would be nice and fallish.....honey-lime dressing is always good, especially with spiced pecans.

Being a home cook doesn't really enter into it imo

I was going to suggest an avocado chocolate mouse but I'm not sure if that keeps well. So...

Stuffed grape leaves!  Aside from the rolling it's a pretty easy recipe.  The stuffing is just rice, grated onion, grated zucchini, grated tomato, parsley, fresh mint, olive oil, salt and pepper.  You can find jarred grape leaves from a mediterranean store, and they need to be blanched and cooled first to help remove the brine.  

This is a video of how to roll them (though she places the leaf shiny side down which is the opposite of what I do, not sure why).  It's simple enough.  As you finish rolling the leaf place it in a pot with a bit of olive oil on the bottom.  Put it seam side down and tuck all the dolmades together as close as possible.  When you've made all your dolmades pour in a cup of water gently and place on top an oven proof heavy plate, this will help keep the dolmades intact as they cook.  Bring to a slow simmer and cook until the rice is cooked through.  These are great cold, easy to eat as finger food and keep for a few days.  

Not to mention that people love them, you'll be the hit of the party even for the non vegans.
