Cupcakes??

I have always been intimidated by baking and stuck to simple box recipes...until 1 month ago when my husband surprised me with a Kitchenaid mixer for our anniversary and I dove in head first! Needless to say, I love it and everything I have done since then has been homemade and delicious!! I want to make cupcakes for my son's dedication this weekend and want to make a homemade batter and icing...my question...have you tried this batter as cupcakes? I was wondering if it still comes out as moist and tasty as a cake. If not, I was going to stick with your regular cake recipe. Thank you everyone!

Did you have a specific batter recipe in mind?

If not....most cake recipes will do double duty as cuppies as well.

May take a bit of practice until you have the perfect portion of batter to get the height for your needs.

Congrats on the KA!

Do try a few of the attachments (the grinder, ice cream maker and pasta roller are all hits IMO) as you become more confident.

Gosh I adore my KA too. Love it. Now can't be without it!

 

Standard sponge batter should work ok, but you can find hundreds of recipes online. If you use one you're familiar with, dont forget you';; need to change the cooking time as a sponge cake cooks takes much longer to cook than a cupcake.

 

Tip for you: do a/some practice batch/es first.  It took ages for me to work out the exact temperatue to bake them at so that the top came out perfectly flat.

 

Also, another tip: I use a 50ml ice cream scoop to meaure my batter out. One scoop in each cup and I then know they'll all be the same size (i use large muffin cups, not standard fairy cakes ones). You could of course also measure each cup induvidually to achieve it, but I find the ice cream scoop far quicker.

Thank you both...I was scared since I didn't have time for a test batch so I stuck with baking a cake! It turned out well, not as moist as I'd like but yummy nonetheless! Thank you for your help!! Cupcake test batches to come! **And I'd love to try the ice cream maker and pasta roller on my KA!
