What veggies can handle Mushroom Sage olive oil?

I recently bought some Mushroom Sage olive oil (I don't recall what I was thinking I'd do with it ...) and I opened it, got a whiff of the sage, and I was instantly thrown into the equivalent of writer's block for a home cook.

 

 

I'd really like to try this on some roasted veggies, but I haven't been able to do it.  Maybe if I get some good recommendations from all of you, it'll get me going with this stuff.

 

So: what roasted veggies would you use Mushroom Sage olive oil for?

I'd probably put it on ravioli. Squash filled ravioli, or cheese.

Defintely agree about the ravioli. 

Maybe sauteed brocolli with garlic , rosemary and cheese. 

 

I would think earthy..... thinks such as pumpkin , squash , nuts maybe , other varietys of mushrooms. 

 

Also think risotto ( could be a long shot depending on the risotto ).

Not exactly a veggie, but maybe to dress cannelinni beans cooked with a lot of garlic.

Use it in a marinade for any meat. Chicken and pork especially, but also with lamb.  As long as you use only a little, any vegetable can handle it.
