Well, according to me both the schools, CIA and Paul Smith, are the top-ranked private schools in America. So, it’s hard for me to find out the cons, there might be some since nothing can be perfect. Since, the majority of culinary schools are private ones which provide more options in choosing among a variety of culinary programs. But of course, not all the private culinary schools are equal. You need to research on the courses offered by them and compare it with your requirements. The location also plays a very important role, if you have a choice among two (or more) well-reputed culinary schools, then why not the one that is easily accessible for you.

The Culinary Institute of America (CIA) has been setting the standard for excellence in professional culinary education. CI A is a much bigger school, but it also keeps class sizes to 16 students per chef-instructor. Each graduating class has four groups of students enrolled in the culinary arts program and one in the pastry program, so there are about 80 new students every three weeks. Classes rotate in three-week blocks, though the introductory culinary fundamentals class lasts for five three-week periods. After that, they will get the opportunity to gain the practical knowledge into their field. The CIA has campuses in New York and California. These locations are population centers - alumni don't have to travel very far to find job openings.

On the other hand Paul Smith's College is unique in that the campus becomes your laboratory. Whether your interests lie in the kitchen, in the forest, or in the rivers and lakes unique living laboratory is at your doorstep. Paul Smith’s offers programs of study in Hospitality, Culinary Arts, Business, Forestry, Surveying, Fish and Wildlife while CIA offers only culinary programs and courses.

Since, your area of specialization is in culinary arts industry, so you can say that it is wise to choose CIA because this school is specialized only in providing culinary arts programs and courses.

You can check the detailed information about CIA here http://bit.ly/1jtfgiK and can compare it with your specific requirements.
