Leftover yeast and only one bread pan

I was testing two packets of old expired yeast. I put each packet into its own bowl of water and dissolved them with some sugar, spilling some yeast out of the first packet. They both worked fine, so I used one of the bowls of dissolved yeast in my bread. What do I do with the other bowl of dissolved yeast and sugar? Can I just dump it down the drain?

And secondly, my recipe makes two loaves of bread, but I only have one bread pan. The dough is supposed to rise twice, once before I shape it and again after I put it in the pans (if I had two pans). While half of the dough is going to be rising the second time in the pan, will the half without the pan rise okay on the cutting board?

Down the drain is a fine way to dispose of your excess yeast mixture.

 

One option for you to consider is first rise then divide your dough and pan one, but refrigerate the second until your pan is once again available.  You'll need to bring adjust the second rise time in the pan for the second loaf (allow more time) since the dough will be cold and needs to come up to temp before it will rise in earnest.

 

Another option is to half your recipe so you only yield one loaf.  I do this alot with no ill effects.

You can also freeze the dough for the second loaf if you want to wait even longer before you bake it.
