What to do with deer liver.

So I was given a fresh deer liver today was going to cook it for breakfast tomorrow. I haven't cooked deer liver before, but was told that it cooked similarly to calf liver. It was not a very large deer. Anyone done deer liver?

I've done it. smile.gif i have eaten it a lot actually, raw and cooked. If it's a young deer just cook it like veal liver. If it's an older one, some people leave it in milk overnight.

For me, it begs to be cut into small strips and sauteed in clarified butter with lots of fresh herbs, and servedĀ  with "Roesti" a Swiss potato pancake...

I use deer liver the same way as calf's liver.

Every smoker quits smoking sooner or later!

Only the smart ones are doing it while they are still alive.
