Making Vegetables Tasty

I hate vegetables. I tried searching for ideas and knowing how bad the search function still is on the Huddler platform I didn't find anything (but maybe I missed something). Here is my question, how can you make vegetables palatable to someone that can't stand them?

 

Alton Brown had a few episodes of Good Eats where he highlighted how often children hate vegetables because they're not prepared well, but even then I find myself not particularly caring to eat vegetables. In my case it is probably significantly mental, I hated them growing up and never being forced to eat them I didn't. Now in my early 20's and trying to eat better I still find them repugnant, to the point that when I try to eat salad I have to repress a gag reflex the entire time. I don't have problem's with the starchier vegetables a la potatoes and corn, but the green vegetables I can't stand. 

 

The thing is, I have no problem with a vegetable soup. However living in Costa Rica where even with my AC running it was 87 degrees inside during the afternoon is not particularly vegetable soup weather. I was wondering if anyone had some thoughts on how to disguise vegetables so they don't taste (or more than taste feel like) vegetables to hopefully get to the point where I can eat them.

My mother makes a great noodle salad with those spiral noodles, loads of pan fried zucchini slivers/batonettes, dried tomatoes, red onions, roasted pine kernels and some mayonnaise. Some relative's kid who allegedly ate "no vegetables at all" loved it ... :thumb:

It is possible to overcome this mental block - it IS just a mental block in my opinion.  It is simply not possible to hate something that comes in so many varieties and colors.  There are literally hundreds of vegetables, who has the time to hate all of them?  In my opinion, eating vegetables is something that your body needs and craves, whether you "like it" or not.  You have to be a grown up and although it may be acceptable to be a child who pushes away the brussel sprouts, there ain't nothing cute about an adult who doesn't like at least a few vegetables.  

 

Though I never hated vegetables, there were plenty that I didn't eat with joy.  Salads for example, I have always hated salads... until I forced myself to eat them and now I like them.  One day I just decided that it's just not cool anymore to not like salads.  Raw vegetables play an important role in making me feel healthy, like it or not.  So I set out to eat more salads.  Always as a side dish.  But then I started eating salads as a meal, an entree salad.  This is when I really started to discover salad as being refreshing and filling.  I experimented with lots of different ingredients, beans, chicken, peppers, you name it.  Every day it was something different.  I even add raw spinach to my salads now, unthinkable at one point in my life.  And I realized that I didn't hate salads, I just hated side salads!!!  I don't like mixing my hot food with my cold food.  I can face it now, I don't want cold lettuce leaves to accompany my hot steak and potatoes, end of story!  So no salads for me with hot food.  Instead I choose a hot prepared vegetable like asparagus or broccoli to go with it.  And that way I have overcome my aversion to salads.  

 

Who says you can't eat soup in hot weather?  They're just fine, especially vegetable soups.  You can even serve chilled soups like avocado soup or gazpacho.  Do a search for roasted vegetables and you'll find many that are beyond delicious.

 

So my advice is, grow up a little and push past your childhood aversions.  It's possible, you just have to do it.  Fake it 'till you make it.

If you're feeling ambitious, the  Ottolenghi cookbooks, Plenty, Jerusalem, and Ottolenghi are vegetable-heavy and very innovative. Plenty, in particular, is all vegetables, gorgeously and deliciously done.

 

I can't imagine what else to suggest, since, as Miss KouKou has said, it is impossible for me to imagine anyone hating the entire vegetable kingdom in its infinite variations.

Indians are masters at vegetable cookery. Vegetable curries, dal, malai kofta etc... even their spinach taste like much more than just spinach. I remember a Gordon Ramsay TV show where several restaurants competed and the winner was an Indian vegetarian restaurant - which is surprising when you know everything Ramsay has said about vegetarians.

If you don't like vegetables, there is no reason why you must force yourself to eat and suffer.

 

Unless:

 

1. Your health may suffer without the compounds found only in vegetables.

 

2. You like the expanded opportunities of being able to enjoy more food.

learn to make green smoothies.

very healthy, you will get some veg and no gag reflex.

and delicious too.

I agree.  I wouldn't force anyone to eat anything they didn't like. I wouldn't disguise it, or bury it.

 

I grew up on canned vegetables, overcooked vegetables & meatloaf.  I luv vegetables.  Take some time to experiment with food.  There's a whole world of food options out there.  You are missing out on good, healthy, delicious food. Walk around the Produce dept. or local Farmers' markets. Challenge yourself to try something new.

Well said Cerise! I completely agree that the key is to challenge yourself. People underestimate themselves, they really do.
