Leftover salad ideas?

I can find a use for almost any left overs.  But what do you do with dressed salad??  It's sort of ruined isn't it?

Doesn't it just kill you to toss that unfinished, unsalvageable bowl of wilted greens into the compost bowl (or a garbage disposal)?

My solution is this.... make individual salads in small bowls (side) medium bowls (meal size).

I seldom have anything left and if I do the next time that person's portion will be smaller.

I like chilled salad on top of warm pizza or pita bread. Add cooked shrimp, salmon, tuna, thinly sliced roast beef, etc.  Many ways to go.

It depends whats on the salad , want to give us an example...

Because if i can toss some mayo , or spice in it ill eat it lol.

Usually at dinner parties I make a very simple arugula salad with balsamic dressing to accompany the other rich dishes.  I like to make a bowl of it and everyone helps themselves.  But inevitably there's a bit left, always.  I guess I can toss it into a pasta dish but I'm too busy still eating leftovers to even think about anything as rich as pasta.  It certainly doesn't keep well.

Yeh pasta would work fine cold or hot. 

Or maybe through in some fruits and make a new salad. 

I dont know why but i thought of washing the arugula , patting dry and throwing it in a food processor with basil, olive oil, nuts and garlic and making pesto out of it. I havent the slightest clue as to why i thought of this though <_<. 

 

I also thought of cooking it in bacon fat, tomatoes, ( and maybe some bacon bits) , and onions and serve it with some potatoes over a filet of beef.

Take the leftover arugula, add some grated cheese like fontina. Render some pancetta. Then sweat some leeks in the rendered pancetta fat. Toss both the pancetta and leeks with the arugula cheese mix and use a filling for chicken breast roulades.

Maybe mix with some chopped nuts , red onions and used as a base then servedd with some fish and a mango chutney over it.

Recycle like a few decades ago in mainland Europe; people gave left-overs like that to their homebred rabbits until the next festive day. A little mayo or vinaigrette on their salad didn't hurt the rabbits at all. they seemed to enjoy left-over cold boiled potatoes quite a lot too. They simply didn't eat what they didn't like.

All great saves for the delicate salad greens.

But...dontcha think after the dressing and bruising (tossing and many hands serving themselves) and being bagged up and then sitting in the fridge for a while they may be a tad unappealing ?

Great on top of a tuna sandwich for lunch, or a chicken breast sandwich. Simple uses but it perks lunch up nicely.
