Help! Question on freezing freshly baked cookies for ice cream sandwiches

Hi All!

 

I am new to this forum and need your expertise.  I am planning a baby shower and want to pre-make ice cream sandwiches.  I tried it a few times and my cookies/ice cream sandwich comes out hard as a rock when frozen.  When I let it thaw for 15 mins, the ice cream was too soft.

 

Is their a way to freeze homemade ice cream sandwiches and be able to eat it as soon as you take it out of the freezer?

 

My next experiment would be to under bake the cookies so it is softer, completely cool the cookies, then create the ice cream sandwich and freeze.

 

Any advice is appreciated.  Thank you so much!

Would not recommend under baking anything with raw egg in it as pregnant women as well as the elderly and children have poor immune systems.

Have you thought of using a brand of ice cream that melts slowly?

The premium brands have a higher fat content and melt much quicker than those (usually less costly) with a lower one.

If that is not possible I would freeze the cookie (fully baked) and the portioned and shaped ice cream separately.

Just remove the ice cream and assemble your treats closer to service.

Try fo find a cookie recipe that uses oil instead of butter. When frozen cookies baked with oil are softer than cookies made with butter.
