I saw these and they actually look really really good don't they?  I'm so trying some of these!

Many of these look pretty good, but I don't know that I would call them a "sandwich."  Also many of them reminded of the stacked food that was so popular back in the 1990's.

When you don't eat bread like me it's nice to have ideas for sandwiches. I particularly like the whole cucumbers used as "bread" which can also be pickles if you like that sort of thing. And big slices of red pepper are an awesome idea too, I'm using those for my tuna "sandwich" tomorrow instead of lettuce wraps that I'm sort of tired of.
