Has anyone successfully subbed coconut flour in any of their recipes?
I picked some up last week and tried it for the first time (I am GF and have also started a vegan diet recently)
Problem I am finding is that it makes the products very dry and crumbly compared to regular flours I usually use. Thinking I should try adding more liquids on my next attempt and/or adding some xanthan gum to help bind (no eggs - both vegan & GF recipes)
Any suggestions? I can post the recipes I tried if needed as well. (brownies and cookies)
