I live in Montreal, Quebec, Canada and am starting a personal chef business.  I have certification from a culinary school and have 13 experience in the food industry.  


Does anyone have an RECOMMENDATIONS as to which organization is better; Canadian Personal Chef Association or The Chef Alliance?  Also, Quebec tends to have different regulations for food service then the rest of Canada.  Are there any personal chefs from Quebec that can give me any tips or advice?
