What size scallops are used in caquelle st jaques

Use whatever you like, typically in a restaurant you would find U-10 scallops but 10-20s would also work. 

 

The sizing is more of a preference.

That dish can be made with any scallop, large or small... but it seems to taste (and look) better made with large sea scallops rather than small bay scallops.

Sea Scallops may taste better, however, in my experience, the dish is usually made with Bay Scallops.

 

And, if I recall correctly, the dish is Coquilles  St. Jacques
