Ideas for Halibut

Thread Starter

Hello everyone I am new to the forum but have been viewing it for awhile now. I have to say it is refreshing seeing other chefs dealing with the same issues/questions as me.

I am running a special at my restaurant this coming weekend, which is a grilled halibut with a strawberry jalapeno salsa, and have been tossing around some different ideas for the side dish. I was thinking of a ginger scented cous cous  but I just wanted to here some other ideas that you all have served in your establishments.

i would probably go with forbidden rice for starch and for veg a sauteed mix of carrot and parsnip with cardamom.

What about a basil and rosemary risotto as the starch to compliment the strawberries.  As a veg, I think some simple wilted spinach would work well.
