should i enter culinary or pastry school?
Some entry requirements in certain schools state that you have about six months experience for culinary but I am not sure about baking and pastry. If you are in Paris try to get a job at a bakery or patisserie, even if you are volunteering. Talk to the owner about just shadowing in a restaurant so you get an idea if this is the field you want to go into. I highly reccamend this because school is expensive and life in the restaurant business is very different from what you see on tv. It can be beautiful and rewarding like you think but there is a lot of practice and hard work behind it. I have heard many great things about a couple of Paris schools, including Le Cordon Bleu of Paris. Remember, you are sixteen and your interests and career decision can very well change soon so just do your research.
