I was wondering if i soak sweet potatoes i butter, nutmeg, and brown sugar if the potato would hold that flavor.

Depends on how long you soak it for. They will probably just get soggy if soaked too long. I would just toss them in the spices and melted before you cook them and maybe a light drizzle of butter after.

Ok. Thanks:)

Are you frying them, or baking them?

If you're frying, you might wanna try double-frying them.  After the first fry, they might absorb the flavors.

Why soak them?

I'd lightly roast the nutmeg and add it after I fried them in the butter and brown sugar.
