Fruit Bowl - Anise Marinated

Absolutely delicious - I recommend everyone try this at least once! :)


2.5 tbsp. anise seed
1 c. water
3/4 c. sugar
1 tbsp. lemon juice
2/3 of a sm. pineapple
2/3 of a sm. honeydew melon
1/2 of a sm. cantaloupe
1.5 oranges
1 nectarine
1 plum
1/2 c. seedless green grapes
1/2 of a lime


- Put Anise Seed in middle of 7” inch square of many layers of Cheesecloth (PM for source). Tie edges together with string.

- In Saucepan, combine Anise Seed, Bag, Water, Sugar, Lemond Juice. Boil until sugar dissolves. Then Cook, medium heat for approximately five minutes. Allow to cool.

-Prepare Pineapple, Honeydew, Cantaloupe. Add the syrup and marinate overnight.

Hello Minnie and welcome to Cheftalk. Very nice idea to marinate fruit.


I use a very similar mixture, not to marinate, but to cook pears in. My sugar content is 1/2 or 1/3 sugar to water, or when cooking pears, sugar to red wine. I have cooked peaches the same way in 1/3 substance of sugar to white wine.


But instead of anise seeds, I always use star anise. That might be something you should try out instead of anise seeds. Star anise add an incredible flavor but you need to use rather less than too much. One star anise in my preparations is what I do. On the other hand, many times I also add a small stick of cinnamon plus a few whole green cardamom pods (crack them pods open just a bit to let the syrup reach the black seeds inside; use the side of a knife blade to crack them on the cutting board.

I'm really liking the sound of these recipes. Don't really like cooked fruit and I need to expand my boundaries a bit.
